VEGAN MUSHROOM GRAVY: A DELICIOUS HOLIDAY SUBSTITUTE
Vegan Mushroom Gravy
Last week as part of our Healthy Holidays series of recipes we told you about Glazed Sweet Potatoes and Mashed Butternut Casserole. Now this week we’re following that up with a new tasty substitute for Turkey Gravy: Vegan Mushroom Gravy!
Ingredients:
- 3.5 cups of low-sodium vegetable broth
- 1 cup chopped white onion
- 4 cloves chopped garlic
- 8 oz chopped mushrooms
- 1 tablespoon chopped rosemary
- 2 tablespoons chopped thyme
- 1/4 cup merlot
- 2 tablespoons reduced-sodium tamari
- 3 tablespoons nutritional yeast
- 2 tablespoons whole-wheat or spelt flour
- 1/4 teaspoon ground black pepper
Directions:
- In a large skillet bring 1/2 cup broth to a simmer. Add onion and garlic. Cook for 4 minutes. Stir in mushrooms, thyme, and rosemary and cook for 2 minutes, until mushrooms are tender. Add wine and cook for 1 minute. Stir constantly. Add remaining broth and bring to a simmer.
- In a small bowl, whisk tamari, flour, and yeast to form a thick paste. Add mix to a skillet, and whisk constantly until the paste dissolves. Bring to a boil and cook for 1 minute. Stir constantly until done.
