HEALTHY SAUCES RECIPES: TZATZIKI, HUMMUS & CHIMICHURRI
TZATZIKI
Ingredients:
- Greek yogurt 1 ½ cup
- Cucumber ½ cup (finely chopped)
- Olive oil 3 tbsp.
- Mint 1 tbsp. (finely chopped)
- Dill 1 tbsp. (finely chopped)
- Lime juice 2 tbsp.
- Garlic 1 clove (finely minced
- Salt & pepper (to taste)
Instructions:
Place the Greek yogurt in a bowl, and add the cucumber, mint, dill, garlic, lime juice, and olive oil. Mix it with a spoon, seasoning with salt and pepper. The flavor should be a little bit sour but very fresh.
HUMMUS
Ingredients:
Chickpeas 15 oz. cooked
Tahini 1/3 cup
Roasted garlic 4 cloves
Olive oil 1 ½ cup
Lime juice 3 tbsp.
Cumin ½ tbsp.
Salt & pepper to taste
Instructions:
Place the chickpeas, tahini, roasted garlic, lime juice, cumin, salt & pepper in a food processor, and blend until it is smooth. Add the olive oil little by little until it gets creamy.
CHIMICHURRI
Ingredients
Parsley 1 cup
Oregano 3 tbsp.
Olive oil ½ cup
Red wine vinegar ½ cup
Garlic 2 cloves (finely chopped)
Shallot 1 small piece chopped
Chili flakes 1 tbsp.
Salt & pepper (to taste)
Instructions:
Place all the solid ingredients in a food processor and blend until the ingredients are finely chopped. Remove from processor and place in a bowl. Mix in the chopped ingredients with the olive oil and the red wine vinegar, add salt and pepper to taste.
